An easy pan-seared steak which is marinated in beer for an intense dry-aged flavour then seared to develop a deep crust and basted in a garlicy herb butter. Marinating the steak in a beer of your choice gives the meat a ‘dry aged flavor’ which is absolutely delicious, this process would also work well with red wine.
After removing the steak from the marinade use paper towels to pat dry. A dry surface will guarantee a better sear which adds extra flavor.
Before cooking the steak preheat the pan until VERY hot.
Cook the steak to your preferred doneness, searing for 1 minute on each side for rare, 2 minutes each side for medium and 4 minutes each side for well done.
Use a cast iron skillet for best searing, you can also use a non-stick pan but the non-stick properties will reduce searing.
