A tropical twist on a classic dish! With a burst of so many delicious flavors, this is certainly not your typical macaroni salad recipe. When you think of macaroni salad, your mind often drifts to backyard barbecues and summer picnics. But what if we took that classic and gave it a vibrant, tropical twist? With the bold, bright flavors of the Caribbean, this rich, creamy Caribbean Macaroni Salad will transport you to a sun-soaked island with every bite. This recipe has been part of so many summer family functions. It has ingredients that bring the islands to life! This Caribbean version of macaroni salad builds on traditional elements but adds a few ingredients that make it shine with island flavors: Macaroni: The foundation of this salad, cooked to a perfect al dente texture. Veggies: We’re adding bell peppers, celery, sweet peas, and carrots for a burst of color and crunch, plus some corn and dry raisins for sweetness. These vibrant vegetables not only add nutrition but also make the salad look lively and inviting. Mayo-based dressing: Creamy mayo combined with a splash of lemon juice and a bit of mustard to keep it tangy and fresh. Also, fresh herbs like parsley bring a fragrant, fresh finish that ties the whole salad together. Soooo YUMMY!

This is no doubt one of my favorite summer recipes; it’s perfect to add to your family BBQ or summer picnic. Do enjoy!

Helpful Tips

  1. Season the pasta water generously with salt, approximately 1 tablespoon of salt to every pound of pasta (16 cups of water to boil 1 pound of pasta)

  2. Creole Seasoning gives the macaroni salad a unique taste. Adjust according to your liking but not too much to overpower the other flavors.

  3. Add a pinch of sugar to balance out all of the flavors.

  4. Mayo is key to getting a creamy macaroni salad. If you need more add according to your liking.

  5. Raisins are optional.  The recipe will still be delicious if you decide to omit it.

  6. If you have never used lemon juice in your macaroni salad before…. .trust me you are missing out! It adds a slight of tangy flavor and pairs perfectly with all the ingredients. Trust on me on this one!

Rich & Creamy Macaroni Salad

A tropical twist on a classic dish! With a burst of so many delicious flavors, this is certainly not your typical macaroni salad recipe. When you think of macaroni salad, your mind often drifts to backyard barbecues and summer picnics.

Ingredients

  • 3 cups Elbow macaroni
  • 2 cups mayonnaise
  • 1/4 of each bell pepper: red, green, yellow (cut into small squares)
  • 2 tbsp dry raisins
  • 1/2 tsp yellow mustard
  • 1 cup finely chopped celery
  • 1/3 cup of whole kernel corn
  • 1/3 cup of sweet peas
  • 1 medium carrot, grated
  • 1 tsp freshly squeezed lemon juice
  • ¼ tsp Tony Chachere’s creole seasoning
  • 1/2 tsp brown sugar
  • Salt to taste
  • Garnish with freshly chopped parsley

Instructions

  1. 1Cook pasta until Al Dente.
  2. 2Strain and allow macaroni to cool completely. You can place it in the fridge to chill for at least 1 hour.
  3. 3Once cooled, add celery, corn, sweet peas, carrots, raisins, bell peppers, mustard, and mayonnaise. Mix well.
  4. 4Add brown sugar, creole seasoning, and lemon juice. Mix well.
  5. 5Place into the refrigerator until ready to serve!
