Ingredients

  • 12 oz rotini pasta
  • 1 lb jumbo shrimp, peeled and deveined
  • 3 tbsp butter
  • ½ cup onion, finely chopped
  • 6 cloves garlic, minced
  • ½ cup white wine
  • 1.5 cups heavy cream
  • 6 figs of garlic, chopped
  • 1 tbsp parsley, chopped
  • 1 tsp Italian seasoning (or a mix of parsley, thyme, basil, oregano, rosemary, and garlic salt if you don’t have store-bought Italian seasoning!)
  • 1 cup parmesan cheese, grated
  • ½ tsp red pepper flakes (adjust for spice level!)
  • 1/2 tsp paprika
  • salt and pepper to taste

Instructions

Cook the Pasta

Bring a large pot of salted water to a boil and cook the tri-color rotini pasta until al dente. Drain and set aside.

Sauté the Shrimp

Season the jumbo shrimp with salt, black pepper, paprika, and red pepper flakes. In a large pan, melt 1 tbsp butter over medium heat and cook for about 2-3 minutes per side, until pink and opaque. Remove shrimp from the pan and set aside.

Make the Creamy Sauce

In the same pan, melt the remaining 2 tbsp butter and sauté the onions until soft. Add the garlic and cook for another 30 seconds until fragrant. Pour in the white wine, scraping up any bits from the bottom of the pan, and let it simmer for 2 minutes to reduce.

Combine Everything

Add the cooked rotini pasta and shrimp back into the pan, tossing everything together until well coated in the creamy sauce. Sprinkle with fresh parsley for a burst of freshness.
